Soak the bird in a brine for 24 hours. 2. Preheat oven to 350 degrees. 3. Season both sides of the quail with salt/pepper, followed by smoked pecanwood seasoning (or any type of your choosing). If you aren’t a fan of smoked seasonings, you can use salt and pepper only. 4. Add the oil of your choice to a baking dish. There’s a staple dessert where I live, called Chomeur’s Pudding (or Pouding Chômeur in French) and it’s basically a ball of dough that is placed in the center of a glass or ceramic pan (that’s filled with a mix of maple syrup and cream). Since this dessert is mostly eaten during winter and spring, I thought I’d swap the maple syrup by the strawberry sauce.
