Using shio-koji instead of salt to add flavor can help to reduce salt intake. 100gのカロリー132kcal calories：132kcal/100g 【材料】 乾燥米麹‥‥200g 天然塩‥‥60g 水‥‥300cc（湯ざましかミネラルウォーター） ヨーグルトメーカー ※生麹を使う場合は水の分量を200ccに減らして下さい。 【Ingredients】 200g dried rice malt（koji） 60g sea salt 300cc mineral water（fresh koji; 200cc mineral water） Yogurt machine (TANICA YM-1200) 【作り方】 1、内容器に50ccの水を入れる。 2、付属のヨーグルトスプーンを立て、内ぶたをして乗せる。 3、そのまま電子レンジで容器を加熱する。目安は500W～600Wで約1分30秒。お湯を捨てる。 4、手をよく洗い、アルコールで消毒する。 5、ボウルに麹を入れ、粒状になるまでほぐす。 6、塩を加えてよく混ぜる。 7、それを消毒した内容器に入れる。 8、水を加え、よく混ぜ合わせる。 9、内容器に内ぶたをはめ、ネジぶたをしっかり閉める。 10、本体に内容器を入れ、外ぶたをかぶせる。 11、発酵温度を約55度に設定する。 12、発酵時間を8時間に設定する。 13、スタートボタンを押す。 14、1～2時間ごとに優しく混ぜ合わせる。水が蒸発して麹が空気に触れていたら、ひたひたになるまで水を足して下さい。 15、8時間後、トロリとして甘い香りがしたら発酵完成。 16、はちみつ容器に移すと、容器のまま使えるので便利です。冷蔵庫で保存。賞味期限は約3ヶ月。 ●注意 色がおかしかったり、嫌な臭いがした場合、食べずに捨てて下さい。 ●メモ 岩塩は不向きです。 アルカリ性や硬水も不向きです。 金属の容器は錆びます。 【Recipe】 1、Pour 50cc of water into container. 2、Put Attached spoon into container and put inner lid. 3、Heat for 90 seconds in a microwave at 500W～600W. Drain hot water. 4、Wash your hands with soap and water. Use an alcohol-based hand sanitizer. 5、Put koji in a bowl and rub with your fingers to break up any clumps. 6、Add salt and mix well. 7、Put them in the clean container. 8、Add water and mix all ingredients together. 9、Fit the inner lid and screw top lid on tightly. 10、Set container onto the base of the machine and put out lid. 11、Set the temperature to about 55 degrees. 12、Set the timer for 8 hours. 13、Press the start button. 14、Mix gently every 1-2 hours. Water has evaporated. If the mixture looks a bit dry add a little water. 15、After 8 hours have passed, you will have your Shio-koji. It smells like bananas. Texture is creamy. 16、Put it into a sterilized honey container. Shio-koji will keep for about 3 months in the refrigerator. ●Caution If shiokoji smells strange or develops discolorations, discard it. ●NOTES Avoid using rock salt. Alkaline or hard water is unsuitable.
