The problem with Thai takeout is there is usually way too much oil in it. My version is oil free, can be made mild to super spicy and it’s full of immune boosting ingredients. 🌶🥕🥦 Thai Red Curry with Vegetables and Tofu 1/2 cup chopped red or white onion 1 tablespoon grated fresh ginger 3 garlic cloves, finely chopped 1/2 red bell pepper, sliced into julienne (matchstick) pieces 2 large carrots, julienne 1 jalapeño pepper, sliced 2 small heads broccoli florets (cut into large pieces) 2 large crimini mushrooms, sliced 1 (14 ounce) package extra firm tofu cooked the same as Sesame Ginger tofu in recipe from two days ago (Sesame Noodles) (optional) 2 tablespoon Thai red curry paste 1 can (14 ounces) regular or light coconut milk (or any plant milk) 1/4 cup vegetable stock 1-2 cups thinly sliced lacinato kale, leaves only 1 tablespoon tamari 1 1/2 teaspoons organic cane sugar 1 tablespoon freshly squeezed lime juice fresh cilantro and Sriracha for garnish thinly sliced Fresno chilies for garnish Jasmine rice, 3 cups cooked in a rice cooker Heat a large 12 inch skillet over medium high heat. Add the onions and cook for a couple minutes, stirring a few times. Add the garlic and ginger and cook for another minute. Add 1/4 cup vegetable stock and stir. Add the rest of the vegetables (except the kale) and saute for a minute. Add 1/4 cup vegetable stock, cover the pan and cook for 3 minutes. Remove cover and immediately add all the sauce ingredients (coconut milk,red curry paste, tamari, lime juice and sugar. Stir together and then add the kale. Simmer for 5 more minutes to allow the sauce to thicken a bit. Serve with jasmine rice, cilantro, sliced chilies, extra tamari and Sriracha.
