These are NO-BAKE gingerbread truffles stuffed with cranberry sauce and coated in white chocolate rice krispies ! MERRY CHRISTMAS. RECIPE BELOW! Serves: 15-20 balls Note: You may need more white chocolate and Rice Krispies if you coat them very thick. Ingredients: · 25 Ginger Snaps · 4 oz. Cream cheese, softened · 1 cup Rice Krispies cereal · 1 can jellied cranberry sauce · 2 cups white chocolate melts · 3 tablespoons vegetable oil · Fun Christmas sprinkles! Method: 1) With a ½ teaspoon measuring spoon, scoop 20 servings of cranberry sauce onto a plate. Freeze for 30 minutes. 2) While the filling is freezing, grind up the Ginger Snaps in a food processer or blender until a powder is formed. 3) Add the cream cheese and mix together until the dough is formed. 4) Break off a ½ inch piece of dough and roll it into a ball. Flatten it with your hands and add frozen cranberry sauce in the middle. Wrap the dough around the filling and roll it into a ball. Repeat this for all of the balls. 5) Freeze the balls for 20 minutes. 6) In a microwavable bowl, add your white chocolate and vegetable oil and microwave for 30 second intervals, stirring in between each one until it is melted. 7) Once the balls have frozen and the chocolate is melted, coat one ball at a time as follows: 8) First, dip the gingerbread ball into the white chocolate, covering it completely. Transfer the ball onto a plate and sprinkle Rice Krispie cereal onto the white chocolate while it is still warm. Once the ball is thoroughly coated in Rice Krispies, coat it a second time in the white chocolate, covering the Rice Krispie cereal.
