Even if you don’t have a tandoori oven, you can still recreate its deliciousness using a combination of spices and set the heat to your comfort level. Ingredients .840kg chicken drumsticks (about 7) ½ tbsp paprika ½ tbsp garam masala 1 tsp cumin 1 tsp coriander 1 tsp sweet paprika ½ tsp turmeric ½ tsp red cayenne pepper (add more if you want it hotter) ½ tsp ground ginger ½ tsp onion powder ½ tsp garlic powder Salt ½ cup thick plain yogurt – full fat Juice from ½ lime For the sauce: 2 tbsp thick plain yogurt 1 tsp lime juice For garnish: Lime slices Green tops of a green onion Instructions: 1. Pat dry the chicken, then score (about 2-3 slices). Salt the chicken, then add to a bowl and set aside. 2. Add all the spices to a dry non-stick pan over low heat and toast for about two minutes – until everything smells great. Remove from heat and let cool. 3. To the bowl of chicken, add almost all but a ½ tsp of the spices and rub into the chicken. Add the yogurt and lime juice and stir well. 4. Cover and refrigerate the chicken for at least 30 minutes but up to 24 hours. 5. Preheat oven to 400F (200C). 6. Line a wire rack baking sheet with foil. Spray the wire rack with cooking spray. Add the chicken and pour over the remaining marinade. 7. Bake for 45 minutes, turning once halfway through. 8. Make the sauce by combining the yogurt and lime juice, stir well. Garnish with the remaining spice blend. 9. When the chicken is ready, remove and let sit for 5 minutes. 10.
