I microorganismi di interesse agro-alimentare svolgono un ruolo chiave in agricoltura: dalla fertilità del suolo alla nutrizione delle colture, dalla lotta biologica contro le fitopatie ai fertilizzanti biologici, le fasi in cui i microrganismi ci aiutano a perseguire una produzione agro-alimentare sostenibile, sono tantissime. Rivestono un ruolo importante anche nella trasformazione dei prodotti agro-alimentari come per carne, formaggio, latte, olio, pane, vino. D’altro canto, possono rivelarsi nocivi durante la conservazione degli alimenti, per alterazioni, produzione di metaboliti tossici, e patogenicità verso uomo ed animali. L’esistenza di una vasta biodiversità microbica è funzionale anche al mantenimento degli organismi viventi sulla terra, ed alla sostenibilità dei diversi cicli biologici. Unsalted butter, sweat the shallot like I be sweatin’ Bae, confit salted garlic and the mushrooms (I am a mushroom lover) and then truffle Arborio rice is added with a little olive oil to keep the butter from burning. We like it brown not burnt 👌🏾 I used vegetable stock to prepare the risotto. Slowly ladling in the broth and letting it cook the risotto and absorb over time on light simmer.
