Su quale base vengono scelti e riprodotti i ceppi più adatti alla bioprotezione. 3. Come vengono misurate e valutate le azioni bioprotettive di ceppi specifici 4. Uso su mosto per biocontrollo e protezione dall’ossidazione con Pichia Kluyveri 5. Bioprotezione sul mosto con Lactobacillus Plantarum 6. Bioprotezione su vino con particolare attenzione sul Brettanomyces Sp. con Oenococcus Oeni.
